Castello D'Alba Limited Edition Red Wine 2012
100% manual harvest, for vats with an average capacity of 800 Kg. Stalking and crushing; Cold maceration for 48 hours; alcoholic fermentation for a minimum of 15 days with temperature control. Malolactic fermentation at a controlled temperature of 18ºC for 15 days. Aged for 18 months in French oak barrels, 2/3 new, 1/3 second wine.
Complexity, very concentrated aroma, with black forest fruits, notes of licorice, spices, violets, bergamot, rockrose ... in balance with very elegant French barrel notes. Long and enveloping, you can feel the fruit at the end of the mouth, very ripe and smooth firm tannins, fresh and very elegant, showing an excellent aging in the bottle.
Advice for storing and serving
Storage of the bottle lying at a temperature of 15 ° C. Serve at a temperature of 16 ° C to 18ºC.
Combination with food
Enjoy it with meat and game dishes, cured cheeses or just a cigar.
