Winemaking:
Harvested by hand at their optimum point, the grapes are destemmed, crushed and vinified according to a process based on careful maceration with extraction of color, tannins and aromas from the films, complemented by permanent reassembly during fermentation. This takes place in mills, at a controlled temperature between 28-30ºC, until reaching the desired Baumé degree. In this phase, the wine brandy (benefit) is added, giving rise to a fortified wine. High quality wine, obtained by blending wines from harvests of several years, in order to acquire a complement of organoleptic characteristics typical of this old tawny style. Cálem 40 Anos Tawny is a wine that reflects the art of the blend, and results from the careful combination of wines aged in oak casks, with an average age of 40 years.

Tasting Notes:
Appealing auburn-green color. Powerful nose, of great complexity, where the aromas of dried fruits and abundant spicy nuances explode”, surrounded by touches of honey. In the mouth it is dense, unctuous, velvety but still impresses by its «freshness. A splendid wine, of exquisite quality, with a remarkable aging in wood and that remains in an absolutely delicious finish.
Store and Serve Advices:
Store horizontally at a ± 15º C, constant temperature. Best served at 15 - 18ºC.
Food Pairing:
Slightly refreshed, it is the ideal choice to serve with starters composed of strong cheeses and pates. The velvety texture and the unique aromatic expression stand out remarkably with main dishes that include dried fruits. Irresistible with a terrine of foie gras with aubergine and walnuts. intense cheeses and milk chocolate mousse, or combine with a cigar.
